Monday Munchies - Breakfast Quinoa

What could be better on cold, snowy days than a warm breakfast? Today I am sharing a recipe for Quinoa Porridge courtesy of Honestly blog. I love this recipe because it is a change from regular oatmeal and it is also really easy to make. The quinoa is a great complex carbohydrate as well as fiber, almond butter adds protein, and the berries add important antioxidants to help boost your immune system. Bon appetit!

Healthy Quinoa Porridge


  • 1 cup quinoa

  • 1/2 cup almond milk or whole milk

  • 1/2 teaspoon vanilla extract

  • 1 teaspoon honey

  • 1 cup strawberries, quartered

  • 1 cup raspberries

  • 1 cup blueberries

  • 1 handful of pomegranate seeds

  • 2 Tablespoons almond butter (optional)

  • 1/2 cup sliced almonds, toasted (optional)

  • A few mint leaves (optional)

  • 1/2 lemon or lime (optional)


  • Rinse the quinoa with cold water. Bring a pot of water to a boil, add the quinoa, and cook until it is just underdone (a few minutes less than it says on the packet). Drain it and put it back in the pot over low heat.

  • Add the milk, almond butter, and vanilla and keep stirring for a couple of minutes. Remove from the heat and add the berries, seeds, and nuts. Add honey to taste.

  • Serve in a bowl, squeeze a little lemon/lime juice and top with some mint leaves.
