Monday Munchies – Cucumber Lime Collagen Mocktail by Dr. Axe

Oh, Summer, I'll be sad when you are truly gone. Guys, Summer isn't over yet! We still have over 4 weeks left of Summer. With that said, I'm waiting as long as I possibly can before I start writing Fall-related posts. No pumpkin-spice lattes (which I will be posting about) or sweaters for me just yet.


Today, I wanted to share another delicious, Summery recipe with you that will not only be refreshing, but also healthy. This mocktail is straight from Dr. Axe and provides you with an excellent source of protein. Protein in a mocktail? Yes, you hear that correctly. This collagen powder can be purchased on Dr. Axe's website (linked below) and is cucumber lime flavored. The best thing about his collagen products is that they dissolve quickly and have very mild flavors or no flavor at all.

Cucumber Lime Collagen Mocktail


Ingredients:

  • 2 English cucumbers, cut into chunks

  • 10-15 mint leaves

  • 1/2 cup lime juice

  • 2-inch pieces of ginger

  • 2 scoops Multi Collagen Protein Cucumber Lime

  • 6 cups water

Directions:

  • Place all ingredients except collagen in a blender with 4 cups of water. Blend until smooth.

  • Place a sieve over a pitcher. Pour mixture through a strainer to remove the pulp.

  • Add remaining 2 cups of water and collagen and stir.

  • chill until ready to serve.

Cucumbers are amazing for hydration because, like watermelon, they are mostly water. Ginger is a great detoxifier and the collagen will help with healthy hair, skin, and nails.
