Monday Munchies - Dark Chocolate, Salted Caramel Bark

Okay, I know that I should be encouraging all of you to eat healthy and clean, however I just love holiday treats too much. It's important to eat healthy but sometimes it's fun to splurge a little. My favorite holiday treat is probably gingerbread with royal icing (all homemade of course) and hot, drinking chocolate. If you don't know what drinking chocolate is, it's basically like drinking the highest quality chocolate bar melted down with a little bit of milk. At Home Goods we got a French drinking chocolate with cocoa powder, spices, and pieces of chocolate that you just mix in a pot with a little milk and viola!

Anyway, today I'm sharing a delicious holiday bark with you. I love peppermint bark but this one is dark chocolate (which is high in antioxidants), almonds, and caramel (for your sweet tooth, nothing really healthy about it). My mouth is watering just looking at the picture of this delicious bark.

Holiday Dark Chocolate, Salted Caramel Bark


  • 2 12 oz. bags of dark chocolate chips (or two bars of semi-sweet baking chocolate)

  • 6 oz. caramels unwrapped

  • 1 Tablespoon milk

  • 1/2 cup coarsely chopped raw almonds


  • Line a baking sheet with parchment paper, set aside.

  • Melt chocolate in a bowl; stir until smooth. Pour melted chocolate onto prepared baking sheet and set aside.

  • In a separate bowl, combine caramels and milk. Melt them until smooth and drizzle the caramel over chocolate and swirl using a knife or an off-set spatula.

  • Carefully press almond pieces onto chocolate.

  • Place bark in the refrigerator until set.

  • Break into pieces and store in an airtight container (or eat right away ;) ). Enjoy!
