Monday Munchies – Vanilla Strawberry Overnight Oats

My goodness, I'm tired! I went to my first bachlorette party yesterday and we've got only 5 days until my dear friend's wedding. It's going to be a busy week with wedding prep and teaching. Anyway, I hope you are having a wonderful Monday so far.


I think that the best way to prepare yourself for a good day is by eating a good breakfast. You know what makes breakfast even more enjoyable? Making it the night before and grabbing it out of the fridge in the morning. That's why I'm sharing a delicious overnight oats recipe with you to keep your mornings as stress-free as possible. Enjoy!



Vanilla Strawberry Overnight Oats

Recipe is from Savory Nothings


Ingredients:

  • 1/2 cup plain Greek yogurt

  • 1 cup whole milk

  • 2 teaspoons maple syrup or honey

  • 1 cup rolled oats

  • 1 Tablespoon chia seeds

  • 1 teaspoon vanilla extract

  • Pinch of sea salt

  • 6-8 chopped strawberries, plus extra for topping


Directions:

  • Stir all of the ingredients together very well.

  • Divide between jars and cover.

  • Refrigerate overnight, then serve cold, topped with extra strawberries.
