Oats Aren't Just for Oatmeal

If you are like me, oatmeal would probably be your last choice when it comes to breakfast food. It's not that it tastes bad, it's just that I don't particularly love it. Today I am sharing my favorite recipes using oats that isn't your typical breakfast oatmeal.

Breakfast Granola Fruit Tart with Yogurt


1 cup walnuts, finely chopped

1 Tbsp. sesame seeds

5 Tbsp. coconut oil, melted

1/4 cup honey

1 tsp. vanilla extract

1/2 tsp. cinnamon

2 cups Greek yogurt or coconut yogurt (whole fat)

4 cups mixed fruit (raspberries, strawberries, blueberries, etc.)

Pre-heat the oven to 325 degrees. Grease a mini tart pan or muffin pan.

Mix together the oats, nuts, seeds, melted oil, honey, vanilla, and cinnamon until thoroughly coated. Press the mixture into the tart pan using the back of a spoon to evenly press the granola up the sides.

Bake for 15-17 minutes or until golden brown. Immediately press the granola sides down to form more of a cup, with the back of a spoon. The shell will puff up in the oven so it is important to reshape the crust while it's still hot. Allow it to cool completely before removing. Gently remove the cups and fill with yogurt and fruit. Enjoy!

Banana Oat Greek Yogurt Muffins


1 cup plain Greek yogurt (whole fat)

2 medium ripe bananas

2 large eggs

2 cups old fashioned rolled oats

1/4 cup brown sugar (I recommend Muscovado)

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 cup chocolate chips

Preheat the oven to 400 degrees and grease a muffin tin or line with cupcake liners. Add all ingredients, except chocolate chips, to a blender or food processor and process on high until the oats are broken down and batter is smooth and creamy. Stir in the chocolate chips.

Pour batter into muffin pan and bake for 17-20 minutes or until the tops are set and a toothpick inserted, comes out clean. Let the muffins cool and enjoy! The muffins can be stored in an airtight container for up to a week.

Greek Yogurt Papaya Boats


1 medium papaya, ripe

Plain Greek yogurt

1/2 cup blueberries

1 banana

Slice the papaya in half lengthwise and spoon out the seeds. Scrape out enough flesh to create a small well (keep the inside to eat later). Fill each side with yogurt, fruit, and granola. Drizzle with honey and sprinkle with a pinch of chia seeds (if desired).

Apple Cinnamon Baked Oatmeal


2 cups old fashioned rolled oats

1 1/2 tsp. baking powder

1/2 cup granola

Raw honey

Chia seeds

3/4 tsp. salt

2 Tbsp. chopped pecans

1/4 cup raisins

2 cups diced apples

3 eggs

2 cups milk (almond, coconut, whole milk)

1/2 tsp. vanilla extract

1/3 cup light brown sugar

1/2 tsp. cinnamon

1/4 tsp. nutmeg

Preheat the oven to 325 degrees and grease an 8x8 inch baking dish. In a small bowl, soak the raisins in warm water for about 5 minutes. In a large bowl, mix together the oats, baking powder, and salt. Stir in the apples, pecans, raisins, then set aside.

In another bowl, whisk together eggs, milk, brown sugar, cinnamon, and nutmeg. Pour over the dry mixture and stir to combine. Pour everything in the greased dish and bake for an hour or until golden brown. Enjoy!
